How does one braise a beef steak?

Braising is simply a cooking method that involves browning meat in oil, then cooking it in a small amount of liquid in a tightly covered pan, either on the stovetop or in the oven. The long, slow cook time helps develop flavor and turn tougher meat cuts fork-tender.

Why is my braising steak tough?

If the roast is left in the oven long enough to break down the tough tissues, then the outer portions of the meat become overcooked, dry, and tough. Braising/pot-roasting is a much more effective means for breaking down the tough fibers than any dry heat cooking method.
